This fact sheet is designed to educate nutrition professionals about the nutrition and cultural identity of Cuba through food. Traditional Cuban foods, recipes and social patterns around eating. Present historical health beliefs and implications on health prospect. Assess growing health concerns in response to influx of processed foods and post Cuban Revolution rationing. Includes Cuban-American culture and health statistics. This fact sheet is designed to meet an eight-grade literacy level to serve as an educational tool for diverse populations.
